見出しは

\chapter{ほげほげ}
→ \headfont          \prechaptername \thechapter \postchaptername ほげほげ
→ \gtfamily\sffamily 第              1           章               ほげほげ

と展開されます．したがって，見出しの数字だけを \itshape にするなら

\renewcommand{\prechaptername}{第\itshape}
\renewcommand{\postchaptername}{\upshape 章}
%\renewcommand{\headfont}{\itshape}

とすることも考えられるでしょう．

\chapter{ほげほげ}
→ \headfont          \prechaptername \thechapter \postchaptername ほげほげ
→ \gtfamily\sffamily 第\itshape      1           \upshape 章      ほげほげ

もちろん \ref で参照した場合にも \itshape になっているべきならば
\thechapter の定義を変えることになります．
