その後、/usr/local/share/texmf/web2cのplatex.logとにらめっこを
しながら格闘した結果、エラーを出さずにfmtutil --byfmt platexを
実行し、platex.fmtファイルを作成することに成功しました。ありがとう
ございました。結果的に、/texmf//tex/platex/config/hyphen.cfgを
リネームし、/texmf/tex/generic/babel/hyphen.cfgを
/usr/local/share/texmf//tex/platex/config/にコピーすることで
エラーが発生しなくなりました。

が、一難去ってまた一難で、

 sophia% platex jpolyglot_test.texと実行すると、

のようなエラーが出ます。そしてどうにもこのエラーメッセージの
意味が分かりません。何を警告されているのか教えていただけない
でしょうか。
